Day 23: I don’t know about you, but I need a cocktail!

It doesn’t seem to matter what’s going on in life – if you have a fancy glass with a nice fruit decoration – or heaven forbid an umberella poking out – you feel instantly relaxed.

For me, drinking a cocktail makes me feel like I’m on a holiday – albeit a very short one as they never take long to consume.

Cocktails make me think of tropical beaches and warm weather. So it’s not just about the drink – but the vibes that come with it.

So I decided I’d share the summer vibes with you today and give you the magic recipe to one of my many favourite cocktails to make at home. I like it because it only has one form of alcohol in it – so you don’t need to take out a loan to buy the ingredients. It’s cool, refreshing and I promise, even if you are just sitting on the coach watching TV while you sip away – it will take you mind to a warmer, sunnier, happier place 🙂

Mango, Ginger and lime cocktail

  • 2 fresh mangoes
  • 1 cup of caster sugar
  • The juice of half a lime
  • 275ml bottle of ginger beer
  •  1 bottle sparkling wine


Peel the mangoes and chop the flesh roughly.

Blend mango flesh (without the stone – your blender won’t like it!), sugar and lime juice until smooth.

At this point, if your guests haven’t arrived, you can pour the mixture into a jug and cover with plastic wrap and pop in the fridge until you are ready to serve.

To serve this yummy drink, pour the cold ginger beer and sparkling wine into the mango mixture and stir until combined. Pour into nice big glasses (as pictured) and decorate with halved lime slices.

Once you take the first sip – you’ll quickly realise you won’t stop at one glass. Obviously this recipe is ideal if you are having people over, as it makes a substantial amount.
